I like the "Joe's Fill-in-the-sage" stuff. I like that quirky, incidental stuff like the Mormon X-Mas report, etc. Bring it on.

My picks would of course be Zappa's own recordings not the bootleg quality versions that are floating around.

Really, in my post I was thinking of a cool compilation. I'd prefer whole shows. If I could pick the next few ZFT CD releases (Roxy DVD would be first if video was included) I would pick these complete shows (assuming Zappa recorded them and the quality is high) In this order:

Halloween '78
Passaic, NJ 4/19/75
Halloween '72
Vancouver 10/1/75 (mostly just for a better quality version of the awesome Any Downers)
Halloween '74 (because I've never heard it and '74 is my favorite Zappa year)

Or how about a Halloween boxset '72-'78? Unedited. Maybe leave out '77 because we all have Baby Snakes.

Halloween 74 has a great combo of Big Swifty and Apostrophe. Big Swifty segues into it during the guitar solo, which is guitar heaven. You´ll love it. It´s a way of live!

My dream release would be the entire Festival Hall '68 performance on DVD (Not Blu-Ray? Well no, why?). Everything that we get on the disc but all the edited out bits too. The quality of the recordings and vision (as seen on the video Uncle Meat) are outstanding and very professionally shot.
Who needs to remaster that kind of stuff?

That would be my ultimate. No whacky 60's camera effects like those that ruined the '68 Bremen gig (IMO), just great shots of the Mothers playing at a fantastic and historic venue. It does not get much interest on this forum but I personally go mad for those orchestral pieces, they remind me a lot of the music on the originally intended Lumpy Gravy.

In terms of unheard music I again would dig into that period of the early Mothers and I would like to hear the more serious side of this amazing band. Lots of improvised pieces that allows the listener to hear just how good Gardner, Underwood, Tripp and Preston were. I know we hear more Preston and Underwood in later years but I feel that Gardener and Tripp played on studio cuts that were severely edited and frigged with. Maybe stuff from the UM period?
On side 2 (yeah, I know there wouldn't be a side 2 really) would be a host of Zappa's orchestral music. There must be all sorts of gems in that goddamned basement. All that stuff that Zappa himself said was his SERIOUS MUSIC and not the crap that he had to play for most his career (Who were you trying to kid Frank!?!)

I've thought about it a bit more and I don't really know. I've got everything know and have heard a couple of bootlegs and I'm not sure whether there's anything better out there.
