...and how do you know who were on those planes? Because the government said so? The same folks that are telling us the buildings fell at near the speed of gravity because of the plane impacts?

The exact reason doesn't matter. The fact is we we're duped into believing we were attacked so that we would support just about any goddamned thing our military wanted to do. We are still using this "war on terror" as an excuse for policing and invading. It started with a Big Lie, and it remains a Gigantic Mass Deception.
I worked in heavy construction for almost 20 years in another lifetime and built some intense stuff. After a while you gain a fairly good understanding of how stuff goes together and you know the rules of regulations that govern construction.
The reason the buildings went as they did was due to the design using an exterior support skeleton with a central core, each floor was virtually suspend between and supported by these two points. While this system is a perfectly good design for buildings, it was a death blow for the structure in this scenario. The loss of exterior support combined with destroyed central structure meant the buildings were doomed, it was only a matter of time before the house of cards would collapse.
Unzipped (your term) is exactly what we would expect in this type of collapse, due to the design the floors pan caked one after the other. They literally fall one floor at a time, the so called explosions you see several floors below the collapsing floors ever so often, is the compressed air forcing dust and debris out, similar to air bubbles escaping a glass as water spills in forcing the air out.
All that being said World Trade Center 7 definitely looks like a controlled demolition.
